This is the romantic Santorini of glossy magazines, with uninterrupted views over Oia's puzzle of whitewashed buildings, which tumble dramatically down a steep hillside, and to Nea Kameni - the volcanic crater now partially submerged in the Aegean sea. The hotel has been built into these same rocky cliffs, meaning each room, pool and restaurant overlooks the volcano and impossibly blue sea – it's a dizzyingly beautiful setting.

You can explore the winding streets of the village itself directly from your doorstep, with a pedestrianised marble pathway leading into the centre; it’s barely more than a two-minute walk. For sunset though, you’re best to return to the hotel, escaping the tourist bustle to settle in with a cocktail as the sky turns a majestic, dusty pink.

Small white-picket gates lead off the main pathway onto roomy outdoor terraces. Inside, arched ceilings and whitewashed walls give the feeling of sleeping within a cave on the cliffs. The beds are supremely comfy, and the bathrooms are enviably spacious and come with powerful rainfall showers. As for the décor, expect muted greys, beiges and whites – a minimalist delight. Footstools, coffee tables and ornate chairs add to the sense of old-school romance. 

Snacks and cocktails can be ordered to your lounger from Infinity Pool Bar and Restaurant; and later you can toast the sunset with a glass of fizz. The option for dinner is no doubt the intimate, candle-lit Petra. Dining in here feels rather like eating out on a private terrace – there are just a handful of tables even though the sea views stretch out for miles. Dishes are inspired by Greek Anatolian roots and are prettily plated, with the seafood being the highlight. 

Breakfast is an impressive buffet spread, with all the usual suspects and much, much more besides. There’s even an entire section dedicated to desserts. You can also order à la carte dishes, such as a Greek take on poached eggs served on a soft bun with tomato and cheese mousse. Enjoy it all either at the restaurant or in the privacy of your room.

Headlining the facilities are the infinity pools, with superb views. For a really special day out, ask the concierge about organising a trip on one of the hotel's boats, heading out to secluded swimming spots for a barbecue lunch on the water. Sheer perfection!
